A common friend and Greek Wine expert, Fotios Stamos, responsible for two fantastic sites, www.greekboston.com & www.worldwidegreeks.com, introduced me to Chef Paul. Having absolute trust in Fotios, as we have been collaborating for quite some time, I knew that Chef Paul would be of the same integrity and character, as he was.
Chef Paul came out exactly as I thought. An amazing pro, with deep love & knowledge of his art, progressive yet passionate about the classic Greek recipes and with a flare for introducing to the world the New Greek Cuisine.

Only one thing... When he arrived at Elounda Solfez Villas and we handshaked... he almost crushed my hand and I am no little boy!!! Another sign of a man that has original intention in truly engaging in whatever he is up to. A Greek with a capital "G"!
